My wife found this recipe and made it, its very good.
1 1/2 Cups plain flour
3/4 Cups Sugar
1/2 tsp Bi carb soda
1/2 tsp Baking powder
1/4 tsp Cinnamon
1/2 tsp Salt
2 Eggs
3/4 Cup Mashed avocado
1/4 Cup Vegetable oil
1 1/2 tsp Vanilla
1/2 Cups Chopped walnuts
Method
Heat the oven to 350F
Beat sugar, eggs and vanilla well, then add the avocado and oil. Mix until smooth.
Gradually add sifted dry ingredients and beat until smooth.
Stir in the chopped nuts last.
Pour the mixture into greased loaf pan and bake for 50 - 60 minutes or until a knife inserted in the centre comes out clean.
Remove from pan and cool completely before slicing.

Hmm that does sound interesting. Next time I buy some avocados, I'll try making this.

This is my review on this recipe, its out of the oven and not even cooled off and its half gone , it is to die for real good with a little butter spread over each slice.
