Make vanilla cupcakes using basic recipe. Allow to cool.
Meanwhile, separate 3 eggs. Grate rind and juice of 2 Lemons. In a large saucepan combine 1/2 cup cornflour and 1/2 cup lemon juice and 1 cup sugar. Stir until smooth. Add 1 1/4 cups water and stir over low heat until mixture thickens and boils. Add 60 grams butter and stir over low heat until combined. Remove from heat and beat in 3 egg yolks. Allow to stand. To make meringue, beat egg whites until soft peaks form, add 1/2 cup caster sugar and beat until sugar dissolves.
Cut a hole in the top of each cupcake and fill with lemon mixture. Top each cupcake with merangue and bake 180c for about 5 mins

Not sure as we are all different in what we like but back home i hated them and i didnt see many around shops or anything but over here they seem big and im liking the different ones they make, has anybody seen the show cupcake wars ? some of the cakes they make is unreal.

Back home i wasn't a fan of cupcakes as well yet i seem to have a taste for them here there is something different about them maybe its the different way they are made.

I was a bit surprised to find myself going through this section but the cupcakes took my eye as i love cupcakes! I never in a hundred years thought there was so many different ways to make a cupcake.
