Base
90g butter
90g caster sugar
1 large egg
60g SR Flour
90g Plain flour
Topping
2 eggs
75g caster sugar
180g or more of desicated coconut
Jam for spreading whatever flavour and amount
Base
Heat oven to 180c
cream butter and sugar add egg and all flour (both)
Spread mixture in a lined tin and bake for 15-20 minutes
or until golden brown.
Topping
beat eggs,sugar and coconut together
remove base from oven once cooked and spread with whatever jam
then spread the topping over the jam and bake for another 20 minutes

| I made this a couple of weeks ago, not the exact same recipe but close. It was delicious and my coworkers loved it too!

my sister-in -law brought us over some home made lamingtons on tuesday , when I bit into the first one I thought I had died and gone to heaven ,so delicious and moist ,must get the recipe off her

| was about to write almost the same recipe. In NZ it is called Louise Cake....not sure who Louise is, but she has fine taste..yummy
