Got the thumbs up from Emily and myself, Dennis is still out on his decision...

1 butternut pumpkin diced into small cubes

as much spinach as one wants

1/2 onion chopped

1 clove garlic

salt and lot of pepper

sour cream

filo or puff pastry

in a frypan, saute the pumpkin, spinach, onion garlic and salt & pepper until almost done.  Let cool, and stir in however much sour cream you wish to use.  Spoon this mixture onto the pastry, fold over pastry to form a long parcel, folding up the ends to seal them off.  Bake until cooked and golden brown.
