now I can give you MY made up version of potato soup, which is out of this world, but a little bit fattening...but put it this way...if you don't eat it every day, it's not going to matter at all is it???? lol...I just went with what I thought would taste delicious, and all my friends back in Oz now cook it using this recipe...And by the way, I don't use measurements lol...
Cath's Potato Soup
Potatoes
Chicken or Vegetable Broth
Bacon chopped
Leeks sliced into rings
sour cream
1/2 and 1/2 (I used to use either milk or cream but here they have both together, so I use that instead)
Salt and Pepper
Paprika

Peel & dice the potatoes, and place in a pot with water. Boil until cooked. Strain and mash. Leave chunks of potato if you like chunky soup, if not, then mash it until it is smooth.
In a frypan, saute the bacon pieces and leeks until cooked. Stir into the mashed potatoes. Add a tub of sour cream, as much broth as you want (depending on how thick/thin you want your soup), and then add the 1/2 & 1/2. Salt and pepper to taste.
Sprinkle a little bit of paprika over the soup, and serve up piping hot...
