FISH PIE
25g butter, 1 Tbsp Milk, 3 cups cooked mashed potatoes, 3/4 tsp salt and pepper, 1 Tbsp butter, 1 Tbsp flour, 1 cup Milk, 500g fish flaked, 1 Tbsp chopped parsley, 2 hard boiled eggs, chopped.
Mix first measure of butter and milk into the potatoes, beating with a fork to combine. Season with salt and pepper to taste. Line a pie dish with half the potatoes. Seat remaining pot aside. Heat second measure of butter in saucepan. Stir in flour and cook til frothy. Gradually add second measure of milk stirring constantly until sauce boils and thickens. Remove from heat. Add fish parsley and eggs. Pour this mix into the lined pie dish. Cover with remaining potatoes. Cook at 190 degrees C for 20 minutes or until pale golden.

What would be the best type of fish here in the US to use for this recipe?

My guess would be Tuna but im not great cook :-)

I would say Tuna as well better to be safe than sorry, tuna and eggs go well together.

| I'd use cod or flounder, orange roughy (NZ is sold in our supermarkets here), perch...I think any of these would be good...
